Coffee Almond Chip Cookies

After trying the chocolate chip cookie at The Sugar Me Bakery, I wanted to make my own coffee-flavored chocolate chip cookie. I had success adding instant coffee. The coffee flavor was very slight, so if you are looking for something stronger, add more. Strangely enough, I don't like coffee itself, but I love coffee flavored sweets. By the way, has anyone ever had coffee milk? It's the best! It is like chocolate milk except is flavored with coffee instead of chocolate. When I lived in Boston, I could find Hood's coffee milk easily, but the trend hasn't made it to California. That and Dunkin Donuts... 

Back to the cookies... I decided to throw in some chopped almonds for added texture and went with mini-chocolate chips like Sugar Me Bakery. As a variation, try mixing in some cocoa powder.

1/4 cup chopped almonds
1/4 cup instant coffee granules
2 tablespoons hot water
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup butter, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
1 egg
1/2 cup mini semi-sweet chocolate chips 

InstructionsPreheat oven to 350 degrees F.
Dissolve coffee in 2 tablespoons hot water. In a separate small mixing bowl mix flour, baking soda and salt. Set aside.
Beat butter and sugar together until fluffy. Pour coffee, vanilla, and eggs into the butter mixture; mix well. Slowly add the flour mixture into the butter mixture. Fold in chocolate chips and almonds. Drop dough by tablespoonfuls onto a cookie sheet.
Bake for 12 minutes until light golden brown.
Yields 18 cookies.

  1. I love coffee- to drink as well as in sweets. It gives an extra "oomph" to them even when it's not a predominant flavor. I DO love coffee milk. I can't get it here in VA either, but I order the syrup (Autocrat) on-line. The cookies look delicious!
