Chocolate and coconut are a great combination that I have been craving for quite some time. These are super chewy cookies, and the white chocolate chips add extra sweetness.
1/4 cup semi-sweet chocolate chips
1/4 cup unsalted butter
1/2 cup brown sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 cup flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup semi white chocolate chips
1/4 cup coconut
Preheat oven to 350 F. Line two large baking sheets with parchment paper.
In a microwave safe bowl, combine the chocolate chips with the butter. Heat in microwave until almost melted.
In a small bowl, whisk together the flour, baking powder and salt.In a large bowl, beat eggs, brown sugar, and vanilla together until the mixture is light and fluffy (about 3 minutes). Slowly add the melted chocolate, and mix until well-combined. Fold in dry ingredients until just combined. Fold in chocolate chips. Refrigerate the dough for 15 minutes.
Drop rounded tablespoons two inches apart on the lined baking sheets. Bake 12-15 minutes.
Yields 1 dozen cookies.
